This picture includes sauce because this was the one I made for my family. I ate mine before I got a picture of it!

1 Low Carb Torilla (I used Mission Carb Balance)
2 Servings of Cheese (I used Kraft Natural 5 Cheese)
1 Serving Pepperoni (I used Margherita brand)

Preheat oven to 400 Degrees
Throw a tortilla on a baking sheet
Toss on a few pepperonis, cheese and top with the leftover pepperoni

Put on upper rack for soft, lower rack for crispy crust and bake until cheese begins to bubble. Leave on rack to cool (for crisper) or fold in half for "quesadilla"

We've made these for years at my house. We call them "Pizzaritos" (probably should have called them "PizzaTillas" instead, but the name's already stuck...).

My low-carb edition is pretty easy, too. I stack it WAY higher with veggies and meats though :)

Look for Cento brand or I think also Eden Organics and Contadina. You just have to do some label reading and you should be able to find some with 2-3 net carbs per 1/4 cup serving.
