I just picked up some chia seeds from a local health food store today. These things are cool. They form a gel when wet and absorb a huge amount of water. I'm trying them in a homemade protein bar (also with dried coconut, chocolate flavored whey, almond milk), I'll see how they turn out. I think I'll need to add some soy protein isolate as well and maybe some butter or coconut oil.

They are very low carb/high fiber and also a better source of Omega3 fatty acids than flax seed. You can also eat them whole. They were a staple food of the aztec warriors. From what I've read, the Spaniards outlawed them because of their association with Aztec gods.

I'm thinking that these things mixed with protein powder and water/cream would make a good protein pudding as well.

Keep us updated on the success you have with the bars. I'll be curious to hear your final recipe.

Ok, the bars sucked. :lol: They tasted good but never firmed up. I'll try again this weekend.

I'm going to try the homemade protein pudding tomorrow.

These seeds are really filling. I add two tablespoons to a glass of crystal light and It fills me up big time. They are high in fiber, so it helps me stay regular. :D My big problem when I'm on a strict low carb diet is one of regularity. LOL

I had chia "tapioca" pudding for dessert last night-- yum!

1/2 cup unsweetened almond milk, 2 T. chia seeds, 1 T. coconut oil (this left chunks and never got smoothly incorporated :x ), 1/4 c. pureed canned pumpkin, and some liquid sucralose. Oh, and 200 mg of CoQ-10. This dessert will be a nightly staple of my anti-candida diet. Wonder if you could make cookies with it?
