Hee hee... I've become a veritable Jedi master of label reading and metric/standard conversion these last 18 months. Not that they've been spectacular, but I wouldn't have realized the results I have without it. It's a skill you'll pick up along the way. :)

Typically yes you count everything (Net Carbs) but in some cases is unecessarry.For veggies it depends on quantity you eat in a meal. For a example 100g of lettuce have 3g carbs ,1g is sugars and 1g is fibers.2g net carbs(8kcal).Actually it has a negative caloric value since we burn more calories to wash,chew and digest it. My software has the thermic effect added in total calories burned in a day and I think all good trackers on net.So you don't have to worry.You count everything.But even if don't track exactly your veggies you don't have to worry much(unless you consume tons).That's why veggies are the best food for fat loss,they are filling,nutritient rich and low calories.

What about beets. When I was a little kids I hated them, But then as I got older I now love them and all their sweetness, but when I started watching carbs again I have to go without them

I just like 'em pickled. Although I don't think I've ever had 'em any other way, honestly. Here's a good rule of thumb though. If they make sugar out of them, you probably don't want to be eating them. I am not as anal-retentive as I used to be about picking out every sliver of carrot from my salads, but I don't go out of my way to eat carrots, potatoes or beets. Root vegetables are rather too starchy for my purposes.

I'm going to possibly give this a try someday, though. I'll get some canned beets and pickle them myself by adapting this recipe to use liquid Splenda instead of sugar: http://www.eatingwell.com/recipes/pickled_beets.html. The best I could do for a 1/2 cup serving, though, is 7 net carbs :shock: ! Maybe I'll pass after all...
