dessert idea and a question

Postby cook1040 on Tue Apr 21, 2009 3:02 am

i didn't see this anywhere on the forum yet so i thought i'd throw it up there. I got this recipe from the back of the cocoa container. It originally included gelatin but that was a pain in the butt and i didnt like how it was a jelly consistency. The adapted is much simpler and turns out more like pudding.

Chocolate Mousse
Mix:
2 cups Heavy Whipping Cream
1 cup of sugar substitute (i use splenda)
2/3 cup of baking cocoa

Whip on med/high speed in mixer until desired consistency. Be careful, once it begins to stiffen it can turn to almost a butter quite quickly. Also i find 2/3 cup of cocoa a bit too much so i use a bit less. I usually separate this into 5 portions. The whole thing adds up to about 15 grams of carbs. This translates into 3 grams per dessert.

Okay here lies my question. What are you guys/gals doing with spinach. I'd like to incorporate more veggies into my diet but am unsure of which would be zero or low carb. thanks

Sorry to bust your bubble, but it's way more than 15. 6 grams per cup in the cream, 21 grams in 2/3 c. cocoa, and 24 grams per cup in the Splenda. That's 57 grams of net carb for the whole recipe, or 11.4 grams of net carb per serving.

Use liquid splenda with 0 carbs and you come in at 33 net carb, or 6.6 per serving. A bit better but still nutty for someone like me who has to watch calories as well as carbs. If I'm gonna spend 7 net carbs, I'm going to have a pumpkin-flax cake and get dessert and a veggie all at once!

Search my posts for "spinach" if you want more information than you can stand about it.

You can get less carbs with this recipe which is virtually the same. We discussed this dessert extensively:

It's not stupidity!! Just ignorance, which is easily cured. :) Good on ya for trying to get some more veggies into your diet. Just when you think you've had enough veggies, have some more veggies.
