Inulin - More hidden carbs???

Postby andrewpmast on Sun Jun 21, 2009 2:35 am

Inulin is 5 grams soluble fiber with 5 total fiber grams. So.... how many net carbs is it??

From the wiki - "Inulin has a minimal impact on blood sugar, and—unlike fructose—is not insulemic and does not raise triglycerides,[5] making it generally considered suitable for diabetics and potentially helpful in managing blood sugar-related illnesses. "

It depends on how you look at it. If you're just concerned about your insulin response, like the wiki says, I'd say slim to none. Calorie-wise, it still contributes a little bit. This was interesting reading: http://forum.lowcarber.org/showpost.php ... stcount=19.
