Why does cooked meat have less calories than raw meat?

Why does cooked meat have fewer calories (and sometimes protein) than raw meat? And which measurement should we use when calculating our calorie/protein intake?

Here's an example (Perdue ground chicken patties):

I think it is because the cooking process destroys some of the food making it indigestable. I always calculate from the uncooked levels.
