I just haven't seen a post about these yet and wondering if people have been eating them as a low carb supplement for bread?

They are absolutely fantastic and can be used to make a low carb pizza with a little mozzarella, cheddar, some garlic, and pepperoni!They also have good protein and fat because they're made from mostly eggs.
