Try to find brown rice. You want rice that is as unprocessed as possible. You could try amaranth instead of rice, too.
In Mexico, bread will probably be tough to find. The soft, white stuff is viewed as superior, for some reason. In Texas, we have "Ezekiel 4:9" sprouted grain bread that's suitable. The brand name is "Food for Life", I think.
Hummus you'll probably just need to make yourself. I know Goya brand has garbanzo beans, so you probably can find them there. Sun Vista, La Costeña, or even dried garbanzo beans you might find too. Just don't forget to rinse and soak the dried ones if you use them!
I use tortillas called "Smart & Delicious" by La Tortilla Factory that are low carb tortillas, if you can get those where you are. I wouldn't use just any old wheat tortilla. And I know corn is considered evil,

but corn tortillas are also pretty much whole grain too.
